# How To Cook:

01 - In a small bowl, mix mayonnaise and Dijon mustard until well combined.
02 - Lay out all bread slices. Spread the mayo-mustard mixture evenly on one side of each slice.
03 - Layer half the bread slices with cooked chicken, followed by avocado slices, tomato slices, red onion if using, and cheese slices. Season with salt and pepper to taste.
04 - Top with remaining bread slices, spread-side down, to create 4 complete sandwiches.
05 - Heat a large skillet or grill pan over medium heat. Add 1 tablespoon butter and let it melt.
06 - Place sandwiches in the pan, cooking in batches if necessary. Press lightly with spatula and cook for 3-4 minutes per side, adding more butter as needed, until bread is golden brown and cheese is melted.
07 - Remove from pan and let rest 1 minute. Slice diagonally and serve warm.

# Expert Suggestions:

01 -
  • Ready in 25 minutes but tastes like something from a cafe
  • The creamy avocado balances the sharp melted cheese perfectly
  • Uses up leftover chicken like a charm
02 -
  • Pat your tomato slices dry with paper towels or the bottom bread will get soggy
  • Medium low heat is better than medium high give the cheese time to melt before the bread burns
03 -
  • Use a panini press if you have one for even pressure and those signature grill marks
  • Let the finished sandwiches rest on a wire rack instead of paper towels to keep the bottom crispy
